Shrove
Tuesday otherwise known as pancake day Shrove Tuesday is the Tuesday
before Ash Wednesday which is the first day of Lent. It's a day
of penitence, to clean the soul, and a day of celebration as the
last chance to feast before Lent begins. It is traditional to
give up certain foods during Lent. So that no food was wasted
there would be a feast before Lent began and it is probably from
here that the tradition of wrapping food in pancakes began and
is continued to this day. To make you own pancakes
Ingredients
130g plain or self raising flour
Pinch of salt
1 egg
280ml semi skimmed milk
Utensils
Large bowl
wooden spoon
Electric beater (optional)
7 inch heavy bottomed pan
ladle
Makes 8-10 pancakes

Method
1. Sift flour and slt into a large bowl
2.M ake a hollow in the centre of the flour and add beaten
egg.
work through adding milk slowly to avoid lumps. When nearly
all the liquid has been added beat until smooth and free
of lumps.
3.Place in the fridge for 10 minutes. Add further milk
so that the batter has the consistency of single cream.
4.Take a heavy based based 7 inch pan and heat well the
pan MUST be very hot before the pancake batter is added.
Add a little butter just to coat and ladle just enough
batter to coat the bottom of the pan and cook for a minute
or less until the base is golden brown. Flip the pancake
over (easier said than done) and cook on the underside
until golden.
5. Stack and cover with tea towel until required

These
pancakes can be combined with sweet or savoury fillings or merely
sugar and a squeeze of lemon. Some ideas for savoury pancakes
include cheese and spinach, smoked salmon and cream cheese, Sweet
pancakes can be crepes suzette, pancakes set alight in a pan of
orange juice sugar and brandy/Grand Marnier. Alternatively try
some of the fillings below. We also stock pancake mixes and "Suzettes"
pancakes in our freezer section. These can be posted to you if
in the UK but must be used within the time stipulated on the packet.
